I just saw this modpack listed on Curseforge that claimed to be a Souls-like, except that it's Minecraft so my immediate thought was "Yeah, bullshit it's actually like a Souls-like" until I saw the trailer:
Like, excuse me?! Just full blown dodge rolling and stuff, what?! 
I know mods can alter a game a lot but I didn't really expect it to be possible to outright change the movement of the player character to this degree.

After playing a bit of DeceasedCraft, I'm convinced you can make the PC do just about anything. It just apparently has never occurred to many before that changing the very limited movement of base Minecraft characters could be interesting. Either that or it was very challenging to modify before more recent updates

The short and narrow of why is that when a major update comes along, it takes time for creators to rework their mods for it so everything starts to get locked down to the version prior, and then new mods opt for that version too because it's where every other mod currently is. It's why the recent news of Minecraft moving from OpenGL to Vulkan had a lot of people saying that 1.21 will be the next major modding version, because it isn't going to be quick for mods to update to 1.22 like they can for 1.20 to 1.21.
Thinking of it, Minecraft reminds me a lot of things like LittleBigPlanet, where people were doing things in the game that go way beyond what was expected from it. Granted, Minecraft has the advantage of modding whereas LBP didn't, but I think my general point still stands. I doubt you could modify something like say, RE4 Remake to do things that make you think "Wait, you can do that?!"
